Khao Kha Moo – 泰国猪脚饭

1 kg pork’s front leg (clean well) – 猪前腿

10 cloves garlic – 蒜米

3 crushed coriander roots – 元西根

2 tbl. light soy sauce – 酱油

1 tsp. five spices powder – 五香粉

20 peppers (crushed) – 胡椒粒 和花椒

1 tsp. black and sweet soy sauce – 黑酱油

2 star anise – 八角

1 cinnamon stick – 桂皮

1 tbl fish source – 鱼露

1 tbl oyster source – 牡蛎

1 tsp. sugar – 冰糖

4 hard boiled egg – 水煮蛋

water to cover the meat – 水足够淹过猪脚

Side servings:

1 cup streamed rice – 白饭
2 tablespoon full pickled vegetable – 酸菜
1 handful soft boiled Chinese kale – 芥兰菜
1 tbsp. sliced spring coriander – 元西菜

1 tbsp. whole garlic
2 red chili peppers

Sauce: 辣椒酱

3-4 red  chili pepper  – 红辣椒
1 coriander root 元西根
2 tbsp. minced garlic – 蒜米
1 / 4 tsp. salt – 盐
2 tbsp. lime juice – 酸甘汁

1 tbl sugar – 糖

Cooking Instructions:

1. clean pork’s leg very well. 洗净猪脚,川烫出血。

2. Put water 1 /3 of the pot. 加1/3锅水

3. Use medium heat. Then, add black and sweet soy sauce, light soya sauce, five spices powder, crushed peppers, coriander roots, garlic, pork’s leg and sugar. 加所有材料,大火煮滚,转小火。焖煮大约3小时至猪脚很软。
