Bangkok is my favorite city. Although had been there many time for biz & meeting as well as leisure, this interesting place still give me lots of surprise every time!
Last week i was in Bangkok few days for biz trip. To avoid the heavy traffic in down town, we choose to stay in Novotel Impact. Its nothing much beside the Exhibition Center. Luckily, i found a local wet market & food court on my last day.
I bought the colorful Thai eggplants, red & green curry paste. Its turn into our REAL REAL THAI YUMMY CURRIES for my family!
Thai green curry paste 200g
Pork – 600g, slice thin
thick fresh coconut milk – 300ml
2 tbsp fish source
2 tbsp sugar
200g Thai eggplant cut into half
5 kaffir leaves
3 stalks lemon grass
1 Onion cubes
salt to taste
Thai bay leaf
2 tbsp lemon juice
1. Heat oil, add curry paste, lemon grass & stir fry until oily. add sugar & salt, add eggplant, Kaffir leave & onion keep stir.
2. Add pork keep stir until pock cooked.
3. Add fish source & coconut milk. stir until fragrant. Add lemon juice.
4 finally sprinkle Thai bay leaf on top. serve with steam rice.
