Pumpkin Yam Bread


1/2 cup warm water
11g instant yeast
2/3 cup warm (NOT HOT) whole milk
2 large eggs, beaten
1-1/2 cups fresh pumpkin puree
2 Tbsp vegetable oil
1/2 cup dark brown sugar
2 tsp salt
1 Tbsp cinnamon*
1/8 tsp nutmeg*
4 cups bread flour

* Optional

1 medium yam, cut & steam about 30min till very soft. paste when hot. add 150-200g fine sugar & 2 tbsp corn oil.

add yeast into warm water with 2tbl sugar, let it ‘wake-up’ for 10-15 min. mix all ingredients & knee untill smooth & elastic. covored & rest for 40-50 min or double the size. make it into desire shape or add any type of filling you like. bake in preheat oven 180-200 degree C for 20-35 min or untill golden brown.
